Las Vegas Native Climbs the Culinary Ladder from Dishwasher to Executive Chef
LAS VEGAS, NEVADA (March 17, 2026) – Jackson-Shaw, a national real estate developer based in North Texas, announces the appointment of Cesar Juarez as Executive Chef for its dual-branded AC Hotel by Marriott Symphony Park and Element by Westin Symphony Park in Las Vegas.
“Chef Cesar Juarez is a Las Vegas local with a deep passion for cooking and a strong dedication to teamwork and culinary excellence,” said General Manager Mark Kirsch. “He worked his way up through the culinary world, starting as a dishwasher and progressing through the ranks with dedication and hands-on experience. His leadership, creativity, and connection to the local community make him a valuable addition to our hospitality team.”
Juarez was born in Fullerton, California, and raised in Las Vegas. His passion for cooking began early in a family where food and hospitality were part of everyday life. His father and uncles shared a love of cooking, inspiring his lifelong interest in the culinary arts. Like many chefs, Juarez began his career as a dishwasher, where he learned the value of hard work and teamwork in a professional kitchen.
His first cook position was at Bally’s Hotel at Burger Brasserie, where he worked alongside his brother Victor and began developing the culinary foundation that would shape his career. Today, Juarez serves as Executive Chef at the hotel, leading the kitchen team alongside his brother, who serves as Executive Sous Chef.

The two hotels, seamlessly connected under one roof, are located on the south side of South Grand Central Parkway at Symphony Park Avenue, between the World Market Center and The Smith Center for the Performing Arts. Sharing a single address, the five-story development offers 441 upscale guest rooms and opened in September 2025. The hotel’s management company is Crescent Hotels & Resorts.
